MANILA, Philippines — No matter how you try to keep things simple this holiday, you still end up having to host a small get-together at home.

Your balikbayan tita and her family, which may include your favorite cousin, will make the rounds of the houses of members of the clan during their month-long stay. Your high school best friends are sure to drop by one of these days. Then there’s the potluck party with your in-laws.

So, what do you prepare — both to serve and to bring to the potluck? An appetizer should be a good choice.

The San Miguel Foods Culinary Center suggests light and refreshing Creamy Ham in Tomato Cups. Not only are they easy to prepare. These bite-sized holiday appetizers also bring a fresh and festive twist to the table. 

These tomato cups taste merry and bright, and they look the part, too!

Creamy Ham in Tomato Cups

Ingredients:

1/4 kg. regular native tomatoes

1 tsp. garlic powder

1 cup grated Magnolia Cheddar Cheese

3 cups Magnolia Real Mayonnaise

8 slices Purefoods Fiesta Ham, chopped

Shredded cabbage, lettuce or parsley leaves for garnish

Procedure:

1. Cut the top of each tomato. Using a melon baller or a sharp knife, carefully scoop out the seeds and pulp. Place each tomato upside down on paper towels to drain off excess juice.

2. In a bowl, combine the rest of the ingredients. Stuff each tomato with ham mixture.

3. Chill in refrigerator for at least 2 hours.

4. Serve on a dish with shredded cabbage or lettuce or over parsley leaves.
