MANILA, Philippines — Vegetarians love tofu. It is their main protein, replacing meat. But even non-vegetarians eat a lot of tofu because it is a very versatile ingredient that stands on its own, served with a variety of sauces, and goes well with fish, pork, beef, chicken, and vegetables, too.
Tofu is usually stir-fried with other vegetables, such as cabbage, carrots and beansprouts, but it can turn out well on its own, with just ginger and spring onion and a little oyster sauce and water.
The chefs of Mama Sita’s tried this Ginger Tofu recipe, and it turns out to be such a surprisingly delicious treat that’s both refreshing and light.
Ginger Tofu
Ingredients:
1 pc. firm tofu block, sliced, fried and drained
1/4 cup Mama Sita’s Vegetarian Oyster Sauce
1/4 cup water
2 tbsps. finely sliced ginger
2 tbsps. chopped spring onion
1 tbsp. chopped wansuy (cilantro)
3 sprigs wansuy, washed and roots trimmed
Procedure:
1. Cut each tofu into cubes, exposing the unfried portions.
2. In a bowl, combine all ingredients for the sauce, except wansuy sprigs and half of the sliced ginger. Add the tofu. Mix well.
3. Transfer dish to a plate or pan that will fit a steamer. Cover steamer and steam dish for 5 minutes.
4. Uncover, remove from steamer, top with remaining sliced ginger and wansuy sprigs.
5. Serve immediately.
